We have had theft issues here so to be sure our bikes dont go "walkabout, as we say in Australia, I made these securing rings by welding a "D" ring cargo hold-down to a plate. The plate and studs were then glued to the concrete slab in the carport.
Nothing can stop a thief but you can slow them down or they need to make a racket to get your bike (investment).
With the "U" Bolt lock and the bike cabled to the ground I think it is pretty difficult to steal these now!
Slowing them down a bit is always a good idea, but using a cable that lies on the ground makes it much easier to cut. With large enough bolt-cutters, the concrete surface provides plenty of leverage assist to cut through as you can apply full body weight to the top handle.

If it fits through your floor ring, a high-quality hardened and huge security chain would be better than a cable as long as the lock mechanism is as high off the floor as possible; something like this:

I use an ABUS (https://www.bikeshepherd.org/best-bike-chain-locks/)chain lock, made with hardened steel to provide high-security features. In terms of security, this chain is most formidable in providing maximum protection for the bike.

Those chains look ideal for leaving in place at the lockup location, but heavy to tote around (I've seen people wear them like heavy belts). I use an ABUS U-lock, with an ABUS cable for additional options once in a while (locking two bikes, looping through front wheel, locking to a tree etc.). Found a nifty location to strap it to the rear basket of my Mini StepThru with the ABUS mount after much pondering on that unique frame. The cable is coiled and the two end loops passed through the U-lock to secure it in place.

I agree with you that ABUS u-lock is a great option.
I have the kryptonite version with integrated lock. It has one of the highest security ratings and I purchased the "full replacement" insurance if the lock is broken and the bike stolen. Send in a photo of the broken lock and the police report, and they fully replace the cost of your ebike.
