If I was going further I'd definitely look to bring a compact socket set or just the sockets needed to remove the rear tire. Perhaps also something to put under handlebars if you need to flip bike upside down to replace rear tube.

Not sure if that sealant will work for fatbike tyres. Maybe better to carry spare tubes and a pump.. :)
OK, so I've watched some videos and read the responses here. So far this is my list:
Tire lever from Crankbrothers (speedier lever)

A leatherman type multi tool which I already have.
Tube patch kit.
A good tire pump? The issue I wonder about is the style between a smaller hand pump or a "floor" pump. The concern being that with fat tires they require a lot of air to fill. I also want one with a pressure gage instead of carrying two devices. I was looking at the Pro Bike Tool pump with gauge. The issue here is that the pump doesn't start until 20 lbs which could be an issue if we want to let out air for beach riding and trying to figure out the low pressure for that.
Tubes? No idea what to get. We purchased the rad rover step-thru. I think I want two since we have two bikes. The last thing I want is to be out with the wife and need more than one. While the odds are probably astronomical, you can imagine the wife's reaction when she has to push her bike back! 😂
